Garlic Toast

Burnt garlic is impossible to miss on the first bite. Usual cause: it goes on the bread too early — on a hot pan, it only takes a few seconds to turn bitter.

Ingredients

  • 4 slices of bread, ideally a day or two old
  • butter or oil for the pan
  • 1 clove of garlic
  • salt

Steps

  1. Cut the bread into slices about 1.5 cm thick. Reach for bread that is a day or two old — fresh bread turns soggy easily in a hot pan and loses its shape.
  2. Heat a pan over medium heat and melt a bit of butter in it, or add a little oil. The fat should coat the slice in a thin layer, not pool around it.
  3. Lay the slices in the hot fat and fry for 2–3 minutes per side, until golden. Swirl the pan occasionally so the heat spreads evenly.
  4. If you prefer a toaster, put the slices in on a medium setting and toast to golden according to your toaster — it comes out drier and without any added fat.
  5. Cut a garlic clove lengthwise and rub the cut side over the toast right while it is still hot. The heat pulls out a strong flavor within seconds.
  6. Salt to taste and serve right away while it is still crispy.

Tip: Do not put the garlic on the bread before frying or into the fat in the pan — at high heat it turns bitter and burns quickly. Rub it on at the end instead; the hot surface releases just as much flavor without any bitterness.
